Krosin

Krosin çiğdem ve gardenya çiçeklerinde bulunan doğal bir karotenoid bileşiktir. Gentiobioz adlı disakkarit ile krosetin adlı dikarboksilik asitten meydana gelen bir diesterdir. Parlak kırmız renklidir ve 186 °C'de ergiyen kristaller oluşturur. Suda turuncu bir çözelti oluşturur.
Krosin safranın renginden başlıca sorumlu olan kimyasal bileşenidir. Ayrıca güçlü bir antioksidan olduğu gösterilmiştir.[1][2][3]
